What to eat for breakfast on keto?
Breakfast can be come boring and very ‘samey’ whether you’re eating keto or otherwise.
I love bacon and eggs, yogurt and keto granola, keto porridge, and smoothies. However, every now and again you need a real treat. Something that just gives you a hug and makes you feel better about everything in the world. This is when I make these keto pancakes.
These are light and fluffy pancakes that make the perfect indulgent breakfast, or dessert depending on how you feel!
Shrove Tuesday (pancake day) is always a winner in my house – friends I haven’t seen for weeks will drop by. I love it.
The best keto almond flour pancake mix
I’ve tried a number of different keto pancake mixes. This combo is by far one of my favorites. This pancake mix is more like an American fluffy pancake than a traditional English, thin pancake (more like a crepe).
This recipe uses almond flour. I have another recipe using coconut flour. Both are beautiful and are just a matter of personal preference.
When my friend’s daughter comes around, she always wants these almond flour pancakes, and I happily oblige.
She has never once commented that they are not like a non-keto pancake. The best bit? I get all the ‘cool auntie’ points for feeding her ‘junk’ food. When really, she’s eating no sugar so does not turn into a sugar demon whilst I’m looking after her!
She only ever gets sugar within 20 minutes of her parents picking her up!
How many carbs are in keto almond flour pancakes?
If you are making the 3-inch version of these, each pancake will be approximately 2.5 net cabs. With 11 g of fat and 157 calories and 6 g protein.
I’m not going to lie to you – I normally eat these in 3’s!
How to make almond flour pancakes from scratch
These pancakes are really simple to make.
Throw all of the ingredients in the NutriBullet or place them in a bowl with an electric whisk. If you want to make the batter in advance you can and leave it in the fridge overnight.
If you don’t have a NutriBullet and don’t want to spend the money on one, this electric whisk works just fine for breaking down all of the ingredients.
When ready to cook you can use silicone mold to ensure that your pancakes are the same size and depth. This makes flipping your pancakes really simple. They will be smaller than in the picture so you will get more out of the mixture.
Or use 3-inch baking rings for bigger pancakes. The choice is yours!
TOP TIP: don’t flip the pancakes too soon as they will not be firm enough, wait until they are a nice golden color before flipping them.

As I’ve mentioned above, I do feed these to my friend’s children when they come to stay. If you’re wanting to make them fun for children, themed pancake molds are fantastic!
Freezing your almond flour pancakes
If you find making pancakes too much like hard work – or you just don’t want the mess of making them again – why not freeze your keto pancakes?
By freezing them, they are there ready for the next time you want them. Make them as normal, and let them cool.
Stack them with a layer of silicone paper in-between and place them in a freezer bag or a Lock & Lock box, or anything suitable for freezing, and then they are ready for you when you want them.
How to reheat your almond flour pancakes
To reheat your pancakes allow them to defrost naturally or defrost in the microwave and then heat some oil in a pan and just give them a minute on either side on a low heat to heat them through and then add the topping of your choice. Perfect!

2 teaspoons vanilla extract
4 eggs
150g almond flour, blanched
180ml cup almond milk
2 teaspoons baking powder
35ml avocado oil
¼ teaspoon salt
35g Erythritol
More oil for the pan
Directions
- Add the eggs to the NutriBullet along with almond milk, vanilla and milk, and then process until combined. Add the sweetener, salt, baking powder and almond flour and process once more until the batter have smoothened. Allow batter to rest for at least 5 minutes.
- Lightly grease a hot pan over medium heat with oil. I use an atomizer for this for even and controlled volume and distribution
- If you’re using a silicone mould place this in now.
- Prepare each pancake with 3 tablespoons of the batter, and then spread into a thin circle of about 3-4 inch.
- Place the pancakes into the frying pan and cook for about 2-4 minutes, until bubbly on tops and the edges are dry and set. Flip and continue cooking the pancakes for additional 2-4 minutes until cooked through. Add more oil to the pan as required and repeat the cooking process with the remaining batter.
