Delicious Almond Flour Keto Waffles -Belgium Style!

Sometimes all you need in life is a good waffle…somehow waffles can make everything better…..and what better if it’s keto-friendly waffle too. Try this simple sweet keto waffle and top with your choice of savoury or sweet- here the only limit really is your imagination!

Sometimes all you need in life is a Sweet Waffle, and all the better if it’s keto!

Years ago (more than I care to admit) I went on a school trip to Germany – there was my first experience of waffles (other than potato waffles from a box – a staple of mine when I was a child!).

It was smothered in chocolate and caramel sauce. I was hooked.  This wasn’t really surprising seen as I loved churros – and still do to this day.

At that moment eating that waffle, everything seemed right in the world. Let’s face it, in my early teens the most stressful thing was probably who I was going to sit next to on the coach ride home. That waffle was still a thing that memories were made from! 

Are Keto Waffles good?

Keto Waffles are soooooo good!

I’ll be honest with you I have sampled many waffles over the years but none have compared to that memory I have.

However, I’ve never tried to make them – I really don’t know why? Possibly the fear that if I could make good waffles that they would become a staple of my diet.

Who knows how big I would have ended up had this been the case?!  Ironically, now I can make keto waffles, and they are a staple of my diet – I probably have them at least once a fortnight and they are heavenly.

Can I use Almond Flour on Keto?

Almond Flour is low-carb. 50 grams of almond flour contains 160 calories, 14 grams of fat, 6 grams of protein, and just 2 grams of carbs, this makes it suitable for a keto diet.

Almond flour in the shops can be expensive, and due to this I buy it online. It’s not only a better value, but it’s also the best quality I have found without having to sell an organ!

The best thing about almond flour keto waffles?

The best thing about keto waffles? Other than the fact that they are delicious in their own right is the fact that they can be made into a completely different meal depending on the topping you choose.

I personally don’t have a favorite topping – it all depends on my mood.

It may be warm with Greek yogurt and berries (especially as a breakfast).

However, if I’ve had a bad day and want comfort food they are delicious with lemon juice and erythritol or with a skinny syrup (caramel, chocolate fudge, golden syrup – you name it and they live in my cupboards!) finally, how about with a lovely fresh keto ice cream on the side – heaven!

Can you freeze keto almond flour waffles?

The best thing about keto waffles? They can be cooked in batches and will keep in the fridge for a few days or even better – batch cook them and freeze for when you have that craving! I do this all of the time.

I will double (let’s be honest I’ve tripled it sometimes!) the below recipe to make additional. Whilst the waffle maker is hot I’ll get a few batches in. I’ll then let them cool and freeze them.

A good tip is to use silicone paper in order to keep them separate so they don’t stick to one another when frozen. Then they can easily be removed as you want them.

Getting the right equipment

If you don’t currently own a waffle maker and are unsure whether you’ll stick with a keto lifestyle – don’t rush out and buy an electric waffle maker. Try silicone waffle trays – you can use them in the oven to make gorgeous keto waffles.

Once you are committed to keto waffles, then you can invest in an electric waffle maker.

What to top your keto almond flour waffles with?

The toppings are really limited only by your imagination.

  • Caramel
  • Chocolate fudge
  • Golden Syrup
  • Bacon & maple syrup
  • Greek yoghurt, berries and honey
  • Strawberry Syrup
  • White chocolate
  • Peanut butter
  • Lemon & sugar (erythritol)
  • Keto ice cream

Delicious Almond Flour Keto Waffles -Belgium Style!

Ingredients

  • 70g Almond Flour

  • 1/2 teaspoon baking powder

  • 2 tablespoon Erythritol or any keto friendly sweetener of your choice

  • 2 tablespoon almond butter

  • 35ml almond milk

  • 1 large Egg, separated

  • 2 tablespoons Butter or coconut oil

  • 1/2 teaspoon Vanilla extract

  • 1/4 teaspoon salt

Directions

  • Preheat waffle iron over high heat, and then spray with oil.
  • Beat egg white in a bowl with a whisk in order to have stiff peaks and then set aside.
  • Add almond flour together with salt, baking powder and erythritol into the Nutribullet and blitz a couple of times to ensure that there are no lumps.
  • Melt butter together with the almond butter until runny – add to the Nutribullet with the dry ingredients and add the almond milk, egg yolk and vanilla
  • Blitz until smooth
  • When done, fold the batter into the egg whites. Make sure not to over mix, the batter should remain fluffy and light.
  • Scoop the batter to the prepared waffle iron and then close the lid. Allow to cook for about 5 minutes until the steam is no longer coming out.
  • Top as desired
